I think the lifestyle is so attractive because, as mentioned, the freedom that comes with it. The thought of coming and going as you please without having to answer to anyone is very appealing.
Though, I imagine it's a lot harder than it looks to make it a sustainable way of life - so, good on you Tom for doing so 👍.
I count myself lucky as I've been able to achieve a similar lifestyle, though I still have an employer.
Yes, I still have to show up every day, Monday-Friday, but I'm lucky because I now work from home full-time - probably the only plus of the COVID pandemic.
Not having a boss or manager looking over my shoulder every ten minutes and being left to work to my own devices allows me to live a relatively stress-free and independent lifestyle. As long as I do the work and hit my deadlines no one bothers me.
I believe there are many ways to live a digital nomad-esk lifestyle without having to jump straight in at the deep end. You just have to find a way to make it work for you.
