Writing every day and publishing every day are two separate things.
It is good to write every day to keep yourself ticking over but putting pressure on yourself to publish every day - and to a high standard - is always gonna lead to burnout. (Speaking from my own experience).
I like to read others' work, comment and engage with them as a form of staying active and in the writing mindset.
At the same time, I'll have a piece I'm working on which I'll chip away at - jotting down ideas, maybe writing a paragraph or two as I gather information. I find this also helps keep me in a writing frame of mind until I'm ready to put my article together and publish it.
